Rye Toast with Avocado and Radish Smash
A healthy take and home-made option on the famous and topical Avocado Smash that caused so much controversy in the media regarding its cost at Cafes. You can make this yourself. Avocados are an excellent source of monounsaturated fat and vitamin E. They are high in calories so I would recommend only having 2-3 a week in total. Radish has a high vitamin C content and fibre as well as having anti-oxidants properties. Fibre lowers your risk of colon cancer, heart disease, diabetes and diverticulitis.
Time taken :
¼ avocado, diced
½ tsp lemon juice
2 x 40gm slices of rye bread
2 tbsp reduced-fat fresh ricotta cheese
2 tsp finely chopped chives
2 x slice of Radish
Pinch dried chilli flakes ( optional)
4 cherry tomatoes, halved
1 Mix avocado, tomato, chilli and juice in a small bowl
2 Toast bread and top with ricotta and avocado mixture
3. Add slice of radish on side
4. Top with cherry tomatoes (optional)
5. Sprinkle with chives and season with pepper. Add chilli flakes if desired.
